Chocolate Tea-Cup Cakes w/ Lime & Strawberry Bi-Colour Frosting
Happy birthday to me! Today these gorgeous silicon patty cases came in the mail, a present from one of my friends from school. They are too cute! And of course I had to use them right away. This was also the first time I’ve tried piping bi-coloured frosting, and I’m quite pleased with the result - not only, bi-coloured, but with two different flavours too.
A while ago I found this awesome vegan chocolate cake/cupcake recipe online (please ignore that the website/cake isn’t pretty, it’s a brilliant recipe). It’s awesome, as it doesn’t have any ingredients in it that you typically wouldn’t find in any old pantry, and it produces fabulous light and airy cupcakes with flavour to boot!
I’ve been using this recipe quite regularly and it’s never failed me, until tonight.
I made a whole batch, and a half batch (my cupcake stand has 18 whole things), but I made one extra in the half dozen as I wanted to try one.
This is what I can’t work out, as far as I know, the whole batch turned out purrrrrrrfect (meow!). The half batch though, they’re real stodgy and weird, and look completely different and all. Don’t want.
I’m so confused, I followed the exact same recipe, same method, same oven temp, same baking time, very different results. So weird.
Does this ever happen to anyone else? Theories as to why this happens?
